8oz/225g self raising flour
pinch of salt
2oz/55g butter/margarine
1oz/25g strong, practically eye-watering, cheddar cheese, grated
5floz/150ml milk
Preheat oven to 220C/425F/Gas mark 7. Lightly grease a baking tray.
Sift flour and mix in salt. Rub in butter. Alternatively, bung these three ingredients in food processor and pulse until like breadcrumbs.
Stir in the cheese, then drizzle in the milk while mixing until a dough is formed.
Turn the dough onto a floured board and knead lightly. Roll or pat out to about 1/2 inch/2cm thick. Either cut into squares/rectangles or cut using 2 inch/5cm cutter. Place on baking tray and brush tops of scones with milk. Pop 'em in the oven for 12-15 minutes. Cool on a wire rack.
Although, best served warm with butter and, if you have a taste for it, Marmite.
Some suggested add ins - mustard powder, cayenne pepper, ground black pepper, parsley, herbes de provence, Worcester Sauce (couple of drops).
