I had what I can only describe as a Nigella moment this evening. Was baking some fish, and wondered how to do the potatoes. And I remembered Nigella Lawson preparing an all in one roasted dish where she threw in all the vegetables and chicken into one dish and drizzled oil over. So, about ten minutes before I put the fish in the oven, I melted some butter with some garlic, chopped six unpeeled new potatoes into eighths and threw them in a dish with the butter. Drizzled over olive oil and sprinkled thyme over them. Cook for 40 minutes at 200 centigrade. Sprinkle with sea salt and serve.
